The black summer truffle (Tuber aestivum) is a close cousin of the Burgundy truffle (Tuber unicinatum), and is usually in season from April to mid-September. Black summer truffles have a very distinctive and delicate flavor and a wonderful, slightly nutty aroma with notes of hazelnut and fresh earth.
Our wild black summer truffles are harvested in North Greece during the season. The truffles then are carefully brushed, washed, sliced thinly. The carpaccio is then mixed with premium Greek extra virgin olive oil and presented in glass jars.
Using the carpaccio you can decorate dishes with flair as garnish, or easily aromatize and flavor delicious pasta sauces, broths, salad dressings, and soups. Use them in meat dishes or to finish sauces or stews with a flourish.
